Our NFE Team Member Maddy made these stunning artisan Apple Rose Tarts recently and we were overjoyed to share her recipe for the holidays!

Apple Rose Tarts
Makes 6 roses
1/2 package (1 sheet) Gluten-Free Puff Pastry (we like the GeeFree brand)
2 organic red skinned apples, cored and sliced as thinly as possible into half-moon slices
2 tbsp organic lemon juice
4 tbsp organic apricot jam
Powered Coconut Sugar and/or Cinnamon
-Preheat oven to 350 degrees F.
-Grease a muffin tin with coconut or grass-fed butter
-Thaw puff pastry (about 1 hour at room temperature).
-Place apple slices in a microwave-safe bowl and cover with water.
-Add lemon juice and stir. Microwave for about 3 minutes, or until apples are soft and pliable. ( May also gently boil on stove top)
-Microwave the jam in a microwave-safe bowl until thin and spreadable.
-Slice puff pastry into 6 strips (each about 2.5 by 10 inches).
-Brush one side of each strip with the melted jam and lay overlapping apple slices on the top half, lengthwise. Be sure that the apple slices are thin enough and overlap completely.
To Shape Rose:
-Fold the bottom half of each strip up over the apple slices, pressing the ends to secure.
-Starting at one end, tightly roll the strip to form a “rose”. Place in the muffin tin and repeat with the other strips.
-Bake for about 40 minutes or until puff pastry is browned. Top with coconut sugar and/or cinnamon.
